There are some things that you can do to affect the active keys during a
presentation.
1) Kiosk mode will disable all the keys except the escape key(which will end
the presentation.
2) The Keyboard Macro add-in, which allows a user to assign shortcut keys
during a presentation (I do not know if these override the native key's
functions).
3) The No Escape add-in which disables the escape key.
4) A VB6/C controlled presentation that would run the presentation, but keep
the focus, and therefore the keystrokes.
Do any of these sound like they would be of service?
