This is probably a dumb question, but I'm gonna ask it anyway!
Is it possible to uninstall certain elements of Office 2000, and only keep
what I use? (i.e. Word, Excel)
Since there are no patches available for the security vulnerabilities, I'm
hoping to limit the threat by removing the elements I don't use.

Run setup, custom install and tell it to uninstall what you don't want.
Rest will stay OK.

Here, in order, are the O2K security patches I have installed:

o2ksr1a.exe (on my O2K install disk)
sp2upd.exe
O2kSp3.exe
office2000-KB947361-FullFile-ENU.exe
office2000-kb920906-fullfile-enu.exe
office2000-KB943990-FullFile-ENU.exe
office2000-KB944425-FullFile-ENU.exe
office2000-KB958435-FullFile-ENU.exe

They are all available at the microsoft site, and I would install them. My
experience was that a Google search is the best way to find them. On-site
search was useless, but maybe that has changed.

Not a dumb question at all. It's been quite a while since I used O2000, but
I think you can run Setup, choose a custom install, then change the features
you want to remove from "Installed on my computer" to "Not available" (or
similar wording).
