There is the basic compilation in the Office 2007 Resource Kit
that lists a number of these features, at least those taken off of the 'front row' (Ribbon) in the U.I., and left to be added back
manually.

You can also find some of them by using the menu command map for each of the apps, and the blogs by the different Office app teams

Yes, but there is not one single list... they're all spread out in different
places. So far I've found Excel and Outlook, but I haven't found lists of
"deprecated features" for the other applications. >>
