Office selects whole words

When selecting text, it's not possible to select parts of words. The problem
is particularly in Outlook. I've disabled the feature "When selecting text,
automatically select the whole word" in Tools > Options > Other > Advanced,
but this doesn't help. I was hoping there could be an option to disable this
for the whole Office or even Windows...

That is exactly the problem: when draging, the whole word is selected.

Is this issue in Office applications or in Windows? If so which
applications and versions? Also, if you move the mouse above or below
the "word", more than the "letter" will be selected.

It's in particular in Outlook 2003.
To explain more clearly: when I select a part of one word, it's ok. The
problem is when I move to the second word, it selects the two words
completely.
I know I'm an awfull explainer, so here's an example:

Let's say I have "Microsoft Office". If for some reason I would want to
select and copy "crosoft Off", I could select the "crosoft" with no problems,
but as Soon as I touch the "O", it selects the whole of the "Microsoft
Office".

What I want is to be able to select only the "crosoft Off"

I don't have 2003, but are you using Word as your e-mail editor? If so
UNcheck "select whole words" or the like in Tools, Options, Edit.

Also after it "pops" to the end of the second word, can you pull the
cursor back left and have the selection retreat?

Use shift and the arrow keys to limit selection to exactly what you want.
