Office should allow me to find and edit non-saved files.

Microsoft Office should allow you to find, recover, edit and save not saved
files. During installing, it should allow you to select a certain location
on your hard drive to save documents, all document that are made. If you
forget to save a very important file you should have access to a back-up file
that the office program made for you.
I am using Microsoft Office Student and Teacher Edition 2003.

It's called "auto-save." Use F1.
