The salesperson said that we would have to register and
submit 'paperwork' to microsoft to prove we meet the
teacher qualifications. My wife has her teachers
certificate but I'm wondering exactly what they're going
to ask before I open up the package. Has anyone gone
through a complete registration process for this
version? If so, what is it that needs to be sent in as
proof?

No, there is no formal registration process. You do not have to prove that
you are a qualified user to either the store or Microsoft.
