There are probably thousands of sites with information that can be saved and
used offline.

on http://office.microsoft.com/training/. :-(

While the courses on the Office Online website aren't setup for download use, there are courses (about $2/month/course with 1 year
subscription to each course) at MS e-learning for Office 2003 that can be downloaded.

There are free courses there for learning Office 2007 that can also be downloaded and/or used online
