OL 2007 Category Behavior

What could cause categories to change on their own?

For example: I've had categories assign themselves to emails/messages own
their own, when I've never told them to do that for those emails.

Or emails in one category somehow assign themselves to another category.

Beginning to thing someone is messing with me or my outlook is going bonkers.

Are you in a view grouped by categories? Maybe you accidentally drag items
from one group to another.

The new Quick Click category is also a source for confusion (click the
Categorize button, choose Set Quick Click): When you have set that, it's
easy to change an assignment accidentally.
