OL uses the email addr vs. the text addr for a Junk Mail filter

Outlook filters are using the background info vs. the foreground info in Junk
Email and possibly Spam ? Though the properties of the 'recepient' shows my
email address, the Spam Bots are using erroneous frontal names in their mass
mailings ?

Though my "Display Name:" is Toby White-Beebe with an "E-mail Address" of
(e-mail address removed), the incoming emails don't filter when the "Display Name:" is
Leanne Vancuren with an "E-mail Address" of (e-mail address removed) listed in
properties.

When setting up an email account in OL, you have the capabilities of
"Display Name:" vs. the hieroglyphic text of (e-mail address removed).

Spam Bots get right through this filter, because in the background,
everything is correct ? If we could figure out how they're grabbing the
'Mailing List' off of hosting ISP's, we could block that too ?

You need to post to an Outlook support newsgroup. This one supports the
OneNote program. Make sure to include which version of Outlook you're
running, and which updates you've applied.
