OL2003 - new/undesirable "features"?

1. When I compose a message in PLAIN TEXT it goes out as plain text but
the copy of the message that appears in my Sent Items folder is in HTML.

2. In the Sent Items folder, all names in the "To:" column are
bracketed with single quotes. 'Bob Smith' 'John Doe'

3. When addressing messages, you put in a person's name. Before
sending, the auto-checking features apparently replaces the name with
the contents of the new Display As field. My dislike is that the
"Display As" field defaults to including the email address within
parentheses. I can see where this might be helpful - it gives the
sender a chance to visually confirm the email address, or something like
that I suppose. But it also makes every entry much longer and more
'cluttered'.
a. Can I turn this off?
b. Similarly, I'd like to find a way to go through the entire
Contacts and customize/revert the "Display As' to just name.

4. The Reading Pane. Apparently it is turned on by default. I have a
lot of folders organizing my email and other content and it's more than
a little timeconsuming to have to go into every folder and reset it. Is
there no global control? Can't find
one...

5. The new Views menu, Arrange By submenu, "Show in Groups" setting. I
don't care for it and I would like it to be off. Like #1 above, it's on
by default for every folder with no global/default reset available?

6. I have a contact that I email regularly. The Full Name is
"Catherine 'Kitty' Maness". First name: "Catherine", middle name :
"'Kitty'", with the single quotes, last name, "Maness". File As is
"Catherine 'Kitty" Maness". In OL2000, I could type "kitty" in the
addressing field and it would look her up, no problem. Now, since
upgrading to OL2003, it can't find
her record. Is there a setting to change or did Microsoft withdraw a
feature?

Any ideas?
