How can I create one document which will be made up of multiple
envelopes with different addresses? I could print labels with
different addresses but I would like to have one document that will
print multiple envelopes each with a different address.

Set your page size to the same dimensions as the envelope you want to use.

Use page setup and choose suitable margins, so the address appears in the
correct place on the envelope.

Type each address on a new page (or use mail merge).

Print the resulting document, feeding each envelope manually through your
printer.
