OneNote

The same as you would any other copy/paste function on a desktop or laptop
computer. Select the text you wish to copy within the email. Either
right-click the selected area or go to Edit/Copy on the drop-down menu, then
go to OneNote, place the cursor where you want the Paste to begin,
right-click or go to the Edit menu and select Copy.

If you're on a Tablet PC, use your pen to drag-select the area to copy,
either use the pen button for Copy (if set up that way), hold the pen to the
surface of the screen a few seconds to enact the right-click menu and then
select Copy or go to Edit/Copy on the drop-down menu.

On the Tablet, open OneNote to the position you wish to paste, again use the
pen button (if you have one) for the Paste function, hold the tip of the pen
to the surface to enact the right-click menu and select Paste, or use the
Edit/Paste drop-down menu.

An even better -- and faster -- solution (assuming you're using Outlook
2003) is to use the "Send to OneNote from Outlook" PowerToy. I use this
and the one for Internet Explorer on a daily basis. They can be found
at http://office.microsoft.com/en-us/assistance/HA011408961033.aspx and
are free for the downloading.
