How to open a new window with a different user interface ?
Example with Word : opening a new Word document opens a
new window, where toolbars can be hidden.

Hi Jean,

Welcome to this Microsoft Project newsgroup

I don't think this is possible within Project. I suppose it's possible to
write some vba code that sets up a new project as you want it, but this
would need to be different for each setting. Maybe a template would go some
way towards what you want. You might like to see FAQ#8 New Project
Template.
