Is there some way to simplify the display of the Open File dialog box
and in particular, to have it display the C: drive by default (rather
than Documents)?

the default folder for open file is user configurable, just go to Tools,
Options, File Locations and alter the documents locations to c:

You need to set this within Word, not Explorer.
