How do I open a document without the stencil pane or the internet search pane
opening at the same time ?

I want the audience to see the content without distraction !

opening at the same time ?

Close the stencil pane, then menu File -> Save As and ensure the
Workspace is ticked.

The workspace is the set of stencils that Visio automatically opens with
your document. This is controlled by the Save Workspace checkbox. Until
recently you could find this checkbox by clicking on the little arrow next
to the Save button in the File > Save As dialog. In Visio 2007, you can
find the checkbox in the File > Properties dialog instead.

The Shape Search pane is controlled through Tools > Options > Shape Search
where you can uncheck the Show Shape Search pane checkbox. This setting is
new to Visio 2007.
