opening / reading .PST files

I would like to be able to save a .pst file and be able to read it in word
(.doc) format.
Is it possible to automatically save all e-mails in word format rather than
..pst.
If not; I'm currently backing up my .pst folders to my documents. Is there
any way of opening these and then saving them in .doc format.
