I have a simple question concerning the Organizer. What items are stored in
the .mpp file and which are stored in the global by default. It seem that
map data is saved the global and all others are saved to the individual
files. Is this correct?

The easiest way to determine what you want to know is to create a new blank
project and then immediately click Tools - Organizer. You will see that the
Global.mpt file contains ALL of the default objects that ship with Microsoft
Project. You will also see that the MPP project contains only a few of
these objects intially, such as the Gantt Chart view, the task Entry table,
the All Tasks filter, and the No Group group.

Next, click the Cancel button to close the Organizer dialog. Apply the
Resource Sheet view, then apply the Task Usage view, apply the Calendar
view, and then return to the Gantt Chart view. Click View - Table and
select the Cost table. Repeat this step and apply the Work table and then
apply the Variance table.

Click Tools - Organizer again. On the Views page, you will now see that the
software copied the Resource Sheet view, the Task Usage view, and the
Calendar view into the project. Click the Tables tab. You will see the
software copied the Cost table, the Work table, and the Variance table into
the project as well. Get hte picture? Whenever you use a default object,
such as a View, the software copies that object into your project.

There are a couple of exceptions to this rule, notably Toolbars and Maps.
These remain in the Global.mpt file and do not get copied into the project
when you use them. Hope this helps.
