outgoing mail rule

I am interested in writing a ruls that sorts sent mail into particular
directories but the best the Outlook rules manager can do is copy outgoing
mail which means that a copy is left in the Sent Items folder. Does anyone
know of a fix to this? Also, I would like to have the send mail marked as
read so that it does appear bold (which happens when I use the Move Copy rule.

Yes. Disable the option to keep copies in the Sent Items folder. You'll
then have only a single copy in the folder to which the rule moves it.

Also, I would like to have the send mail marked as read so that it does
appear bold.

I don't believe this is possible.
