Outlook 2003 Delegate Issues

We are currently using Microsoft Server 2003 and Outlook 2003. I have an
employee who has scheduled several recurring meetings with doctors and she
has now left. I cannot find a way to reassign the delegate for these
appointments. I went in a gave the other person editing rites but can I
change this delegate all together.
