Outlook 2003 Stationary Chooser

There used to be an option in previous versions of Outlook that said "New
Message Using..." and then you could choose your stationary for each
individual email instead of setting it in Options for every mail to use the
stationary. I don't seem to see a way to do this in Outlook 2003. Does
anyone know how to individually choose stationary per email. I don't
normally want a stationary, but occassionally would like to use it here and
there without having to change it in the Options for every mail message.
