Outlook 2003 taskbar icon-running?

Using XP Pro... once I reboot, then load Outlook2003, as usual icon appears
in taskbar at bottom. BUT I usually leave my system up at lunch, nights,
weekends, etc. to receive faxes, etc. Is there no way to turn Outlook off
for those times? I want my smartphone to retrieve email when I'm not at
work. Right now Outlook stays running and keeps grabbing the emails first.
If I turn PC off, smartphone gets emails perfectly, and next time Outlook
runs it gets the same ones too, exactly what I want.
So how to stop Outlook ?
