Unless I have a reoccurring calendar entry, all of my entries are
disappearing. Is there a way to get them back, and how do I set up Outlook so
my entries do not ever disappear?

Turn off AutoArchiving if you have that enabled, otherwise if you
use/sync with a PDA, fix the settings on it.
