Normally they should be saved in the Sent Items folder. The option to turn
that on is here: Tools menu > Options > Email

Tools>Options>E-mail Options. Check the box labeled "Save copies of
messages in Sent Items folder", which is a default setting - it should be on
when you install Outlook for the first time.
