Outlook 2007 HTML Signature Formatting

Does anyone know why after upgrading a few clients to Office 2007, their HTML
and RTF e-mail signatures are all messed up (formatting and font changed)

When composing the e-mail it all looks fine, after its sent, the copy in
sent items is all wrong.

I've read elsewhere this is something to do with 2007 using the MSWord HTML
engine instead of IE, is this true? If so is there any way around it, as i'm
getting hassled about this now!!! :(
