Outlook 2007 requires that you uninstall any previous version of Outlook prior to installation. Then, once you have done so, re-run setup and select a custom installation in Office 2007, selecting the Outlook components to install.
Uninstalling Office programs never touches user data. If you are concerned, you can backup you outlook.pst file.
