I have some e-mails that are showing up in plain format and I want to convert
them to html so I can take advantage of links and such. How do I convert a
plain text message in 2007 to a html format?

One common cause of HTML messages being displayed as plain text is the
recipient having his antivirus program configured to scan incoming mail. If
that's your case, uninstall your AV program and reinstall it without the mail
scanning feature.
