Outlook e-mail: sensitivity settings when sharing

I have permissions to my boss's e-mail and can view and handle from my own
log-in. Can others use the sensitivity settings when they send e-mails to
him that will restrict my ability to see/handle them??

Yes, when they send a message marked as private, you won't be seeing them
unless your boss has explicitly given you that permission or you in case you
have been assigned Full Mailbox Access permissions via Exchange.
