Outlook email reply text changing formatting

When i reply to an email, my font is changing and the text is bolding after i
enter. I've been looking at the Word Options and Format As you type, but
can't figure out how to get this to stop. Under Options, HTML is chosen. My
colleagues aren't having this problem. Does anyone know how to solve this?

I'm going to reword this now that I understand the problem a little better.
When in an email, i type a line of text and enter 3 times and SOMETIMES, the
text will then default to Heading 1 style. It doesn't happen every time,
tho, and I can't figure out what might be causing it. Again, I've checked
all kinds of options, preferences, they styles boxes... I'm at a loss.
