Outlook Holiday File

I am including Office Diary Dates to my Hol File. No problem. The question
is can I include an appropriate "category" when I enter the details. so that
updating the Calendar will include a Category & Colour automatically

No, they will import with the Holiday category.
Creating an ics-file might be more appropriate.

Thank You - a simple and straightforward answer about the Hol file. You
suggest an mcs-file might be appropriate. As a "newish" boy to Outlook &
computing, what is this type of file and how do I create it (Sorry to be so
ignorant)

ics-file ;-)

It's a standardized format for calendar items and also an file format
Outlook 2003 and Outlook 2007 (can't remember for previous versions) can
save in and import from.

You can easily create an ics-file for selected calendar days/items in
Outlook 2007 by File-> Save As...
