Outlook Scheduling Meeting

I have a meeting scheduled for November 2009 for which I am to send
invitations.

It is much too early to send invitations for then. Is there a way to set up
a meeting but delay sending the invitations?

Not with a meeting item. You can do so with a message item.

If you want to schedule when to send out the meeting request, set a task
with a reminder for a short period of time before the meeting is to be held.
