Outlook vs. Lotus Notes: Auto-filing Sent Items into subfolders

I work for a law firm and we have recently hired an attorney who comes
from a "Lotus Notes" shop (we are an "Outlook" shop).

At his prior firm and according to him (I say this because I am not
very familiar with Lotus): when he sent an email from within Lotus, he
would be automatically prompted to save a copy of the email to a
subfolder of his choosing. This was ideal for him due to the number of
emails he sends on a daily basis and his need to file his Sent Emails
based on the content.

Outlook, or course, automatically places a copy of sent emails in his
SENT ITEMS. I explained that he could create Rules from within Outlook
with the necessary condition(s) that would automatically file the
emails into his subfolders upon his sending them. He said many of his
emails, although it may be "TO" a particular person (if "TO" was the
condition of the Rule), may need to be filed into a different folder
depending on the content or subject. In short: each email he sends is
scrutinized individually, therefore the conditions provided with
Outlook would not meet his needs. He would prefer something like the
Lotus option that allows him to pick a subfolder to file the email in
at the time of sending.

Is this possible with Outlook? Any and all input is HIGHLY
appreciated.

P.S. My only workaround for him would be to CC himself and file the
incoming message.
