Overtime recording

I am building a timesheet that has to encompass several projects. Only one
project is eligable for overtime. How do I create a data source that will
auto calculate on a per day basis all time after 10 hours as overtime?

My fields look like:
Location:
Time In:
Time Out:
Subtotal:
Overtime Hours: (should be all time over 10 hours from Subtotal).

I see a field for Total Overtime Hours but cannot tell where it calculates
this information from and how to change it.

When you say that you see a field for Total Overtime Hours... that's in an
already built form you're trying to extend?

What you're going to want to do is put a condition on the Overtime Hours
calculation that'll only calculate the overtime if the project matches the
one that's eligible for overtime. This condition can be put on a rule on the
project field. If the project is changed to the eligible one, the Overtime
Hours will be calculated. If it's not an eligible project, the Overtime
Hours will be zero.
