Here are 2 easy ways to do just that:
Select View -> Header & Footer
In the header or footer, type the word 'Page'
As soon as you do, Word offers to finish the idea, and a
yellow tool tip with the text 'Page X of Y (Press ENTER
to insert)' appears.
Press Enter.

If the above does not work:
Click in either the header or footer.
From the Header & Footer toolbar, click the far
left 'Insert Autotext' button.
Click the bottom choice, 'Page X of Y.'
On the Header & Footer toolbar, click Close.
