Page numbering and duplex printing

I'm manually duplexing to print pages (Word 2003 and 2002) .

It would be nice (I'm old-fashioned) for the page number to appear at the
bottom outer margin for either recto or verso pages, with each chapter
starting on a recto page. Like a published book.

How can I set up page numbering to do this?

Go to where you set up your margins. On the Margins tab you probably want
"mirror" enabled, and on the Layouts tab, enable "different odd and even".
You will now have an even footer and and an odd footer
