How do I change the value of a page from the physical
value? For example if the page is actually page 4 how do
I change it to 3, or 10 or 320?

Jo,

Use a formula field. Example to make page four read page 320 use { =
({Page}+316)}.
The { } is entered using CTRL+F9.

If you want to change the starting page number of a given document/section,
click on the Format Page Number button on the Header and Footer toolbar and
from "Continue from previous section" to "Start at [the desired number]."
