I have a document and I'm using page numbers in the format of Page 1
of 1. I want to print several copies of the same document, but I want
the page number to go up for example Page 1 of 2, etc. Can this be
done?

Not sure what you're asking now.... If your document has n pages, the above
will give you 'Page 1 of n', 'Page 2 of n' etc. on each copy regardless of how
many copies you print. Isn't that what you're after??

I have in every workbook, a custom header with the words "Page
<page number> of <total number of pages>"

Use the File>Page Setup>Header/Footer>Custom Header ... to insert
the icons displayed there to replace <page number> and <number
of pages>. Those numbers will then increment automatically
according to the number of pages in your document.
