Passing on a selected date as read-only or as label

Is it possible to:

- user_1 fills out form containing field that is a date picker
- user_1 submits the form via email
- user_2 opens email with date picker field read-only or converted to a
label containg date

If this is is possible, how would I go about this? Please note I'm new to
InfoPath so any steps or code would be greatly appreciated.

Thank you for this post. You have just saved me a morning work trying to
permission control my form.
