Paste as Plain Text

What is the shortcut in entourage and in word for "paste as plain text"? In entourage, I know it's a squiggle with a dash, then command, then V, but I can't figure out which key that squiggle dash is. I tried everything- option, control, shift, nothing seems to work. Also, while we're at it, what is the shortcut for paste as plain/unformatted text in word?
