How can I copy form an article and paste into One Note without it also
bringing the url of the site I pasted from so that I have to cut the url out
of the field?

in the smart tag that appears after a paste, choose text only, then set it
as the default by clicking a second time. or, go to tools, options, editing
and uncheck the option to include the link to source. Because this removes
embedded links, I prefer to take the time to delete the url.

There is a check-box option (numbered 4) in Tools --> Options --> Editing Category, which says "Include link to source when pasting from the Internet". Just try un-checking it.
