~/Library/PDF Services will take an Automator workflow, an Applesciprt
or even the alias of an application. The latest is by far the easiest:
simply place an alias of Entourage in this folder and you'll be able to
send PDFs through Entourage through the Print dialog

The Mail PDF option available in Tiger's print dialogue is as a matter of
fact an Automator workflow, which explains why it uses Apple's Mail
application. There is an option to use Entourage, however, and to get it,
you'll need to create an alias of Entourage (ctrl-click Entourage in the
Finder and select "Make Alias"). You might want to rename that alias, but
that's optional; then drag that alias into the folder called PDF Services,
located in Macintosh HD>Library. You should now be able to send your PDF
file as an Entourage attachment through the PDF button; just make sure to
select Entourage from that menu, as the Mail PDF entry still launches Mail.

It's really really easy. In the print dialog select click on the PDF button
to see the dropdown list. Click Edit List. Click the little "+" button.
Select Entourage. Your done.
