Pivot Table: Customize summarize behavior?

In a pivot table, your data is summarized with one of
several standard behaviours (count, sum, average, max,
etc) Is there a way to customize these. Example, instead
of taking the max value can you take the 2nd largest value
(using the large function) or instead of counting all
values count just the values greater than X (using
countif?)

Not sure which version this started in but you can double-click on a row
header and select advanced. This allows you to set the top x items. It
won't be as flexible as you seem to want, but just to add to the options
