Plain text format for selected contacts

I am experiencing the familiar problem that my contacts which are using
Outlook Express do not receive my attachments from Outlook. I read that I
have to change the message format to Plain Text (currently HTML, which
doesn't work for them). I also read that you can set the Plain Text format to
selected contacts only. I know you can change the setting when editing a new
mail.
My main problem is that my administration program automatically sends my
invoices through Outlook.
Is there an option where I can choose the Plain text ALWAYS but ONLY for the
selected contact, or do I simply have to change to Plain Text for all
outgoing mail in Tools/Options/etc.
Does your mail look different if you use the Plain Text format always? Or in
other words, what does RTF do to your mail? (I know, not really a question
that belongs here, but mybe someone knows that as well)

Open the contact's record and double-click the e-mail address. Do you see an
"E-mail Properties" dialogue? does that dialouge have an "Internet format"
drop-down at the bottom? If so, does changing it to "Send plain text only"
make a difference?

It is probably me, but I can not find an E-mail properties dialogue. When I
double click on the contact I get 3 tabs: Contact, Insert and Format text.
But none of the ribbons show E-mail properties.
I have found contact properties but that just lets you choose a priority for
outgoing mail.
So, no luck yet ...

Open the contact's record by double-clicking the contact in your Contacts
folder. Then double-click that contact's e-mail address.
