Preferred Encoding for Outgoing Messages - Recommendations?

Hi All,

I'm using Outlook 2003 (2007 shortly) and like everyone, hope that my
emails are readable by the largest number of typical users. Right now
its set for Western Europe (ISO). I'm in Canada?

Any recommendations?
