The options are there in MY Office 2008 with MY Mac, that's how I was able
to tell you where to find them
Make sure you have actually run the HP All-In-One installer to actually
install the HP printer driver on your Mac.
If you haven't, the Mac OS printing subsystem (which is the thing that is
actually doing all the work) doesn't realise that the option "should" be
available for your printer, and thus it won't show it.
If you have run the installer, delete the printer driver and run it again.

Thanks to both responses. I think there may be an issue with this hp printer
and Word 2008 (I have Office 2008 Student, sorry for the 2007 typo). There are
no options under Paper Type/Quality that give me the option in this version
(and it did in 2004 version). I have contacted hp, I'll try to post their
response.
