printing in seperations...why is my black text coming as all of CM

I just figured out how to deal with Pantone colors and for them to be
recognized when converting to PDFs. But when i look at the seperations, it
wants to make all my black text a mix of all the CMY and K, not just the K.
How do i make it to read my text as being all black before converting to PDF??
