There are two answers to this question depending on the message you're
viewing. To make a long story short, you'll either get Entourage's
print dialog box if you're viewing a plain text or simple HTML message,
or the Mac OS' print dialog box if you're viewing a complex HTML
message.
With Entourage's dialog, if you highlight some text in a message and
choose Print, you'll see an option below Pages for "Print Selection."
As far as I can tell, there is no way to do it with the Mac OS dialog
because the selection is not maintained (if you watch in the
background, the text becomes deselected). This is probably a casualty
of the hand-off.
How can you tell which dialog you're getting? The more complex one is
Entourage's (with a preview and lots of check boxes), the
simpler-looking one is the Mac OS'. You can see the difference yourself
by picking different messages and trying to print them.
What is the fix? Entourage needs better support for complex HTML so
that it can render and print such messages internally.
