Problem with color coding after accepting an invite

I make a new appointment, color code it in the label drop down box and then
invite attendees. Attendee accepts but the appointment does not show up color
coded on his computer. And vice versa when he sends me invites.

Is there a way to make sure the appointment stays color coding even after
being accepted into another users calender?

This is normal, expected behavior. Color-coding is personal to you. There is no reason to expect that any given color will have the same meaning for someone else. Therefore, Outlook doesn't include color coding in meeting requests.
