Problems with table linked to Excel

Hi,

1. I have an Access table based on an Excel file.
I want to be able to regularly update data on the
Access table from the Excel file.
At the moment I find that if I make a changes in
either the Excel file or the Access table, data in
both are immediately changed.
I want to be able to control when the Access file is
updated.
I have also found that any changes made in the Access
file, cause the Excel file to get messed up. Data no
longer appears in the right columns.
How can I stop Access from "updating" my Excel file?

2. Is it possible, to have something like a tag, which
associates data entered on a form to a particular
record? I have found that I cannot make changes to the
linked table from a form.
