Is there a way of re-loading the trial program after the
60 days has expired? I got sidetracked on another project
before I could test what I needed to on Project 2003.

Sadly no. Not without reinstalling your OS.
Of course, there must be some way (as it is only software and all things are
possible), but it is a secret known only to Microsoft.
