As far as I know, the trial version of previous versions of Project
(e.g. Project 2003) is no longer available. If you haven't used Project
and just want to evaluate it, I suggest you try the trial version of
Project 2007. If it does what you need, assuming you don't need the
added features of Project 2007, but you can't afford the cost of Project
2007, you can very likely find earlier versions of Project in on-line
auctions (e.g. eBay) for a reasonable cost.
